I got this recipe out of my niece. Actually, it is my sister’s recipe that she has been making for years. So delicious!

Actually, my sister tells me that she originally got the recipe from a family canning company that has been around for decades. He worked there fore over 30 years and shared the secrets.

Preserve Garden Produce to Enjoy Year-Round!

This sweet corn can be used year-round. Use it is salads, soups, casseroles, or a side dish. Just heat through and serve. This corn already has the delicious seasonings that you would enjoy during the summer right after harvest. A bit of sugar, butter, and salt.

Rather than boil this corn, it is baked in 9 X 13 pans. Once the corn is cooled, place in freezer bags. Make sure to label the bags with what is inside along with the date. This corn can last up to a year in your freezer.

A Little Messy – But Very Easy Recipe for Freezing Corn

With this recipe, there is no boiling or blanching. Just clean the corn by removing the husk and silk tassels. Cut the corn off the cob. Season and place in a baking pan. Bake, cool, and bag. Done!

Preparing the Corn for Freezing

In the photo, it shows the corn in the husk with the silk tassels on it yet. Make sure to remove the husk and all of the silk tassels before the next step.

Normally, I do this outside. However, I save the husk as our animals at the farm love eating this. As soon as they smell what is in the paper bags, the animals get very excited as they know they are getting an extra treat.

Cut The Sweet Corn off the Cob

Cut the raw corn off the cob. To do this, there are a few ways you can try. Find the one that works for you.

Hold the corn upright and use a sharp knife to run down the side of the corn. Turn a little and run the knife down the side of the corn again.. Continue to do this until the corn is cut off the cob. Scoop up the corn kernels with a bench scraper and place them in a large bowl.

You could place a cutting board in a cookie sheet. Hold the corn in the large bowl and let the kernels fall right into the bowl. Additionally, some people have had success using a bundt pan and pushing the corn cob through the center hole. This allows the kernels to fall into the bundt pan.

Ingredients in Freezer Corn

  • Fresh Picked Corn:Make sure that the corn is fresh. Look for good color and plump looking kernels. Corn cobs that have dented in kernels is already starting to dry out. Choose a sweet corn that you enjoy the taste. There are so many varieties to choose from; white, yellow, white and yellow combination.
  • Butter:When eating fresh boiled corn on the cob, I always add real butter. combine this with the sugar, salt, and sweet corn and you have a delicious side dish.
  • Granulated Sugar: Sugar adds just a bit more sweetness to the corn. I add a bit of sugar to my kettle when boiling fresh corn. Check out my recipe for boiled corn.
  • Iodized Table Salt: The salt adds an extra flavor to the corn, just like the sugar does. A little goes a long way. .

Ingredients

  • 10 Cups Corn
  • 1 Cup Water
  • 1 Cup Butter Melted
  • 1/2 Cup Sugar
  • 1 Tsp. Salt

Instructions

  • Cut the corn off the cob "raw". Place in a large mixing bowl. Pre-heat the oven to 350 degrees Fahrenheit.

  • Add the water, melted butter, sugar, and salt. Mix all the ingredients together.

  • Put in a 9 X 13 pan. Bake for 45 minutes. Stirring about every 15 minutes.
