We love mac ‘n cheese around here. I was throwing around some ideas with Cris about what I could make next, she suggested some kind of taco casserole. All I could think was, “Yes please!” I couldn’t wait to make it and try it! On top of tasting great, it makes your house smell super yummy too! My kids love this recipe. It is also a great one that you can have them help throw together! They can help pour in the ingredients and stir it up. And if your kids are anything like mine, they love it when I say they can help me with a recipe. Good food and good memories?! Yes, please!

Ingredients
- 2 cups uncooked macaroni cooked al dente and drained
- 2.5 lbs ground beef cooked and drained
- 2 oz taco seasoning (2 - 1 oz packets)
- 12 oz can evaporated milk
- 1 1/2 cups milk
- 16 oz block Velveeta cubed
- 1/2 cup butter melted
Instructions
Mix together all of your ingredients in a large bowl
Pour into a lightly greased casserole crockor 6-quart crock pot
Cover and cook on low for 3-4 hours, stirring occasionally

I haven’t tried making this in my Instant Pot on Slow Cook, but think it should work. Make sure you watch it closely the first time you make it so you can adjust the cooking time as needed.

Hi Nancy!I haven’t tried this with taco sauce, but that does sound yummy! I would cut back a little on the milk so it isn’t too soupy. If you give it a try, let me know how it goes!

I really wanted this but I totally forgot to put it in the crockpot earlier in the day so I just cooked on the stovetop and now we are digging in! This is quickly becoming my family’s favorite meal!

Can you make this recipe with uncooked pasta? Also I do not care for Velveeta, so can you use other cheeses as a substitute?

Hi Sharon!I haven’t tried this recipe with the changes you are asking about. If you use uncooked pasta, you will need to add more liquid and stir it it so the pasta will cook evenly if you have hot or cool cooking spots in your slow cooker. Using other cheese will change the taste and texture of the casserole, but should work. If you give it a try, let me know how it goes!

This sounds amazing, but Id like to put it in the oven. What temp and how long would you recommend? I would also be cutting it in half for our family.

Hi Tanna!I haven’t tried it in the oven or with halfing the recipe. My best guess would be to put it in a 9 inch square pan on 350 for 15-30 minutes. You will have to watch it closely the first time you make it to know the timing for sure. If you give it a try, let me know how it goes!

I’d like to make it, but only need half serving size. Do you think it will still taste good if I use half of each ingredient?

Hi Lisa!
You can definitely make half of the recipe! If you click on the blue servings number it will let you decrease the amounts of ingredients automatically for the number of servings you are looking for… Just keep in mind you will want to use a smaller slow cooker or put a heat safe bowl inside your larger crock to cook it up and watch it closely the first time. Hope that helps!
